Coconut Almond No-bake Macaroons

These are kind-of coconut almond power bite-like things, but I like to think of them as macaroons because they’re gluten free/Passover friendly and that’s basically the time of year I make them. They’re soft and not absurdly sicky sweet like macaroons you might buy from the store. If you’re looking for a macaroon recipe with egg whites (baked), check out my recipe here!

Total time: 10 min. Makes about 14 1-inch round bites.

Ingredients (Substitutions):

  • 1 cup almond flour
  • 1/2 cup unsweetened coconut flakes
  • 2 tbsp almond butter
  • 1 tbsp apple sauce
  • 4 Deglet Noor (or 2 Medjool) dates
  • Glaze: melted chocolate in dash water

Instructions:

  1. In a processor, blend together the 1 cup almond flour, 1/2 cup unsweetened coconut flakes, 2 tbsp almond butter, 1 tbsp apple sauce, and 4 Deglet Noor (or 2 Medjool) dates.
  2. Mold gently into round bite-sized balls.
  3. Optional to glaze with melted chocolate. Melt the chocolate with a dash of water in the microwave and drizzle on top.
