These are kind-of coconut almond power bite-like things, but I like to think of them as macaroons because they’re gluten free/Passover friendly and that’s basically the time of year I make them. Total time: 10 min. Makes about 14 1-inch round bites.

Ingredients (Substitutions):
- 1 cup almond flour
- 1/2 cup unsweetened coconut flakes
- 2 tbsp almond butter
- 1 tbsp apple sauce
- 4 Deglet Noor (or 2 Medjool) dates
- Glaze: melted chocolate in dash water
Instructions:
- In a processor, blend together the 1 cup almond flour, 1/2 cup unsweetened coconut flakes, 2 tbsp almond butter, 1 tbsp apple sauce, and 4 Deglet Noor (or 2 Medjool) dates.
- Mold gently into round bite-sized balls.
- Optional to glaze with melted chocolate. Melt the chocolate with a dash of water in the microwave and drizzle on top.
