In the month that followed the first time I made this recipe, we made this at least 3 times a week. It is that good, very quick to make, and an easy way to get greens in! Sometimes we made it with paneer and sometimes with tofu–both are great.
Total time: 30 minutes. Makes enough for 3 people.
Materials: Processor; 1 frying pan. Missing materials or ingredients? Look here.
Ingredients:
- ½ onion
- 1 tsp cumin seeds
- 2 tbsp green curry paste
- 1 lb (16 oz) spinach, blanched or frozen
- 1 head broccoli
- 12 oz silken tofu
- ½ can (7 oz) coconut milk
- Paneer or firm tofu, about 4 oz
- Salt
Instructions:
- Finely chop and onion and start it heating in the frying pan.
- Add broccoli and spinach to the processor and process until they are finely ground.
- When the onion is translucent, add the cumin seeds and green curry paste and stir around for about a minute.
- Add the spinach and broccoli along with the coconut milk and silken tofu. Let the mixture cook for about 10 minutes.
- Add chopped paneer or more tofu and salt to taste. Paneer only needs about a minute to cook–the tofu may need a few minutes.
- Enjoy with rice or another starchy base!
