Chocolate Banana Bread

Chocolate versions of things that are already good are just as good (I don’t want to say better because this Banana Walnut Bread and this Sweet Banana Bread are kind-of just as good).

Total time: 1 hour 10 mins.

Materials: Mixing bowl; measuring vessels; loaf pan. Missing materials or ingredients? Look here.

Ingredients (Substitutions):

  • 3 browned bananas
  • 7 tbsp (4 oz) apple sauce
  • 2 tbsp olive oil
  • ⅔ cup greek yogurt (I use 2%)
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup spelt flour
  • ⅔ cup oat flour
  • ⅓ cup cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • Optional: crushed walnuts and/or chocolate chips (dark and milk… and white!)

Instructions:

  1. Preheat oven to 350˚F. Butter a loaf pan.
  2. In a mixing bowl (or processor), mash 3 browned bananas, 7 tbsp apple sauce, 2 tbsp olive oil, and ⅔ c greek yogurt together.
  3. Add 2 eggs and 1 tsp vanilla, and mix to combine.
  4. In a measuring cup, add 1 cup spelt flour, ⅔ cup oat flour, ⅓ cup cocoa powder, 2 tsp baking soda, and 1 tsp baking powder.
  5. Add the flour mixture to the banana mixture with some crushed walnuts and/or chocolate chips, and stir until just combined.
  6. Pour into buttered loaf pan and bake at 350˚F until cooked through, likely just under 1 hour.
