Chocolate versions of things that are already good are just as good (I don’t want to say better because this Banana Walnut Bread and this Sweet Banana Bread are kind-of just as good).

Ingredients (Substitutions):
- 3 browned bananas
- 7 tbsp (4 oz) apple sauce
- 2 tbsp olive oil
- ⅔ cup greek yogurt (I use 2%)
- 2 eggs
- 1 tsp vanilla
- 1 cup spelt flour
- ⅔ cup oat flour
- ⅓ cup cocoa powder
- 2 tsp baking soda
- 1 tsp baking powder
- Optional: crushed walnuts and/or chocolate chips (dark and milk… and white!)
Instructions:
- Preheat oven to 350˚F. Butter a loaf pan.
- In a mixing bowl (or processor), mash 3 browned bananas, 7 tbsp apple sauce, 2 tbsp olive oil, and ⅔ c greek yogurt together.
- Add 2 eggs and 1 tsp vanilla, and mix to combine.
- In a measuring cup, add 1 cup spelt flour, ⅔ cup oat flour, ⅓ cup cocoa powder, 2 tsp baking soda, and 1 tsp baking powder.
- Add the flour mixture to the banana mixture with some crushed walnuts and/or chocolate chips, and stir until just combined.
- Pour into buttered loaf pan and bake at 350˚F until cooked through, likely just under 1 hour.
