Walnuts used to be my least favorite nut, and I still don’t like them raw, but baked with bananas they’re awesome!
Total time: 1 hour 15 mins. Makes one loaf.
Materials: Mixing bowl; measuring vessels; loaf pan. Missing materials or ingredients? Look here.
Ingredients (Substitutions):
- 3 browned bananas
- 7 tbsp (4 oz) applesauce
- 2 tbsp olive oil
- ⅔ cup greek yogurt (I like 2%)
- 1 egg
- 1 tsp vanilla
- 1 cup rye flour
- 1 cup oat flour
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- Optional: crushed walnuts or chocolate chips
Instructions:
- Preheat oven to 350˚F. Butter a loaf pan.
- In a mixing bowl (or processor), mash 3 browned bananas (medium sized), 7 tbsp apple sauce, 2 tbsp olive oil, and ⅔ c greek yogurt together.
- Add 1 egg and 1 tsp vanilla, and mix to combine.
- In a measuring cup, add 1 cup rye flour, 1 cup oat flour, 2 tsp baking soda, 1 tsp baking powder, and 1 tsp cinnamon.
- Add the flour mixture to the banana mixture with some crushed walnuts or chocolate chips, and stir until just combined.
- Pour into buttered loaf pan and bake at 350˚F until brown on top and cooked through, about 50-55 minutes.
