Banana Walnut Bread

Walnuts used to be my least favorite nut, and I still don’t like them raw, but baked with bananas they’re awesome!

Total time: 1 hour 15 mins. Makes one loaf.

Materials: Mixing bowl; measuring vessels; loaf pan. Missing materials or ingredients? Look here.

Ingredients (Substitutions):

  • 3 browned bananas
  • 7 tbsp (4 oz) applesauce
  • 2 tbsp olive oil
  • ⅔ cup greek yogurt (I like 2%)
  • 1 egg
  • 1 tsp vanilla
  • 1 cup rye flour
  • 1 cup oat flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • Optional: crushed walnuts or chocolate chips

Instructions:

  1. Preheat oven to 350˚F. Butter a loaf pan.
  2. In a mixing bowl (or processor), mash 3 browned bananas (medium sized), 7 tbsp apple sauce, 2 tbsp olive oil, and ⅔ c greek yogurt together.
  3. Add 1 egg and 1 tsp vanilla, and mix to combine.
  4. In a measuring cup, add 1 cup rye flour, 1 cup oat flour, 2 tsp baking soda, 1 tsp baking powder, and 1 tsp cinnamon.
  5. Add the flour mixture to the banana mixture with some crushed walnuts or chocolate chips, and stir until just combined.
  6. Pour into buttered loaf pan and bake at 350˚F until brown on top and cooked through, about 50-55 minutes.
