I love Larabars, but I do feel bad about the wrappers being trash and whatnot. So I make my own version with dates, cashews, cocoa powder, and other add-ins. Awesome sources of energy during workouts and also really good snacks. For something crispier, check out my Almond Date Rice Krispies!
Total time (not including 2 hours chilling): 10 mins. Makes one 8×4″ pan (about 10 bars).
Materials: Processor; tray to refrigerate the bars in. Missing materials or ingredients? Look here.
Ingredients (Substitutions):
- 1 cup cashews
- 20 Deglet Noor (or 10 Medjool) dates
- 1 tbsp water
- Optional: 2 tbsp cocoa powder
- Other adds: chocolate chips, other nuts, dried fruit
Instructions:
- Process the 1 cup raw cashews and 20 Deglet Noor (or 10 Medjool) dates in the processor. Depending on the strength of your processor, you may want to add a little water to help the mixing (this will result in a softer bar, however).
- Spread the mix on a tray and place in the refrigerator for at least 2 hours before cutting.
- To make chocolate bars, add 2 tbsp cocoa powder, compensating with a dash more water if necessary.
