Chocolate Banana Chocolate Chip Muffins

These are chocolatey with just the right amount of banana. However, if one wanted to make banana chocolate chip muffins, I would direct them to this Banana Walnut Muffins recipe and say “replace the walnuts with chocolate chips!”

Total time (including baking): 40 min. Makes about 12 muffins.

Materials: 1 mixing bowl; measuring vessels; muffin tin. Missing materials or ingredients? Look here.

Ingredients (Substitutions):

  • 3 browned bananas
  • 1 ½ tbsp oil
  • 4 tbsp apple sauce
  • 4 Deglet Noor (or 2 Medjool) dates
  • 1 egg
  • ⅔ cup buttermilk (or milk + lemon juice)
  • 1 cup spelt flour
  • ½ cup all purpose flour
  • ¼ cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • Chocolate chips

Instructions:

  1. Preheat oven to 350˚F and butter a muffin tin. If you’re making buttermilk, add a squeeze of lemon juice to ⅔ cup of milk (otherwise, skip this).
  2. In a processor, combine 3 bananas, 1 ½ tbsp oil, 4 tbsp apple sauce, and 4 Deglet Noor (or 2 Medjool) dates until relatively smooth. Transfer to mixing bowl.
  3. Mix in 1 egg. Add ⅔ cup buttermilk to the batter and combine.
  4. In a measuring cup, mix 1 cup spelt flour, ½ cup all purpose flour, ¼ cup cocoa powder, 1 tsp baking powder, and 1 tsp baking soda.
  5. Add flour mixture to banana mixture along with chocolate chips and mix until just combined.
  6. Bake at 350˚F for ~25 minutes, until tops are springy.
