These are light and airy. One of my favorite recipes. Perfect by themselves or with some almond butter. Feel free to replace the walnuts with chocolate chips if you want banana chocolate chip muffins (or you can try Chocolate Banana Chocolate Chip Muffins…)!
Total time (including baking): 35 min. Makes about 18 muffins.

Ingredients (Substitutions):
- 4 oz apple sauce
- 3 medium-sized ripe bananas
- ¼ cup (4 tbsp) any oil
- ⅔ cup greek yogurt (I use 2%)
- 2 eggs
- 1 cup rye flour
- ½ cup all purpose flour
- ½ cup oat flour
- 2 tsp baking soda
- Spices: cinnamon, nutmeg, allspice
- Optional: walnuts and/or chocolate chips
Instructions:
- Preheat oven to 350˚F, and butter a muffin tin.
- In a mixing bowl, mix together the 4 oz apple sauce, ¼ cup oil, and ⅔ cup greek yogurt. Then mash in the 3 bananas followed by the 2 eggs.
- In a measuring cup, measure the 1 cup rye flour, ½ cup all purpose flour, ½ cup oat flour, 2 tsp baking soda, and add in the desired spices.
- Add the flour mixture to the wet ingredients. Mix until barely just combined.
- Bake at 350˚F for ~25 min.
