Totally no-nonsense, this tart is delicious and nutritious.
Total time (including baking): 1 hour. Makes one pie pan-round tart.
Materials: Mixing bowl; processor; measuring vessels; pie pan. Missing materials or ingredients? Look here.
Ingredients (Substitutions):
Crust:
- 2 tbsp water
- 18 Deglet Noor (or 9 Medjool) dates
- 1 cup rolled oats
- 1 cup almond flour
Filling:
- ¼ cup almond flour
- Juice of one lemon
- 1 cup (4 oz) raspberries
- 1 cup (4 oz) blueberries
- 2 cups (7 oz) peach chunks
- And/or other fruit
Instructions:
- Preheat oven to 350˚F. Chop 18 Deglet Noor (or 9 Medjool) dates.
- Prepare crust: In a processor, blend 2 tbsp water, dates, 1 cup rolled oats, and 1 cup almond flour. Press into pie pan.
- Prepare filling: In a mixing bowl, combine fruit with ¼ cup almond flour and the juice of one lemon.
- Spread filling into crust. Bake 25-30 minutes at 350˚F, until crust browns.
