Honestly traditional rice krispie treats are alright. These are so much better. They’re complex taste-wise and energy-system wise, which is why I love them for during and post-workout snacks. They’re basically the crunchy version of my Date Cashew Power Bars. Let me know if you agree!
If you decide to add some protein powder, you may have to add a bit more almond butter to make sure the mixture isn’t too dry.
Total time (not including 2 hours chilling): 10 mins. Makes one 8×8″ pan (about 9 bars).
Materials: Processor; mixing bowl; tray to refrigerate the bars in. Missing materials or ingredients? Look here.
Ingredients (Substitutions):
- 4 tbsp almond butter
- 10 Medjool dates (or 20 Deglet Noor)
- 2 cups rice crisps
- Optional: 1-2 tbsp protein powder
- Other adds: melted chocolate
Instructions:
- Process together the 4 tbsp almond butter and 10 Medjool dates (and protein powder if you’d like to add that).
- Mix in 2 cups of rice crisps with your hands.
- Press the mix into a pan. Drizzle with melted chocolate if desired. Place in the refrigerator for at least 2 hours before cutting.
