Soft and sweet, these make a good mid-ride treat! (Note: can make these more “snappy” by flattening before baking and baking for longer, but will soften by the next day.) If you’re looking for something more crispy and chewy, check out my Chewy Ginger Molasses Cookies!
Total time (including baking): 20 min. Makes about 18 medium-sized cookies.
Materials: Mixing bowl; measuring vessels; cookie or toaster tray. Missing materials or ingredients? Look here.
Ingredients (Substitutions):
- ¼ cup (4 tbsp) tahini
- ½ cup brown sugar
- 2 tbsp molasses
- 1 egg
- 1 cup brown rice flour
- Spices: ginger, allspice, cloves
- Optional: decorative sugar
Instructions:
- Preheat oven to 350˚F.
- In a mixing bowl, mix together the ¼ cup tahini and ½ cup brown sugar. Then mix in the 2 tbsp molasses and the egg.
- In a measuring cup, measure the 1 cup brown rice flour and add in the desired spices.
- Add the flour mixture to the wet ingredients.
- Bake at 350˚F for ~10 min. (Optional to roll in decorative sugar.) (Optional to refrigerate the batter before baking.)
