Fall’s here, and we all have (too?) many apples. I personally am allergic to raw apples, but as per usual baking fixes everything!
Total time: 1 hour 10 mins.
Materials: Mixing bowl; processor; measuring vessels; scale; 9×9″ pan. Missing materials or ingredients? Look here.
Ingredients (Substitutions):
- 4 oz apple sauce
- 2 tbsp oil
- 2 tbsp maple syrup
- 2 eggs
- 2 apples (chopped)
- 5 Medjool dates (chopped)
- 1 cup/3.5 oz whole walnuts
- ⅓ cup milk
- Orange zest
- Spices: ½ tsp cinnamon, ¼ tsp nutmeg, ¼ tsp allspice, ¼ tsp ginger, ⅛ tsp cardamom, dash salt
- 1 ⅔ cups all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla
Instructions:
- Preheat oven to 350˚F. Butter the 9×9″ pan.
- Grind the 4 oz apple sauce, 2 tbsp oil, 2 tbsp maple syrup, 1 cup whole walnuts (3.5 oz), and 5 Medjool dates in a processor.
- Transfer to a mixing bowl, and mix in 2 eggs and 1 tsp vanilla. Then, mix in ⅓ cup milk and the chopped apples.
- In a measuring cup, add 1 ⅔ cups flour, 1 tsp baking powder, 1 tsp baking soda, and spices (½ tsp cinnamon, ¼ tsp nutmeg, ¼ tsp allspice, ¼ tsp ginger, ⅛ tsp cardamom, dash salt). Add this flour mixture to the apple batter. Stir until just combined.
- Bake for ~50 minutes at 350˚F. Allow to completely cool before slicing (very important).
