This is what “dinner” means without explanation. One of my favorites.
Total time: 40 min, including chopping and farro cooking. Makes dinner for 2-3 people.
Materials: Stovepot; frying pan.
Ingredients:
- 16 oz tofu
- 1 bell pepper
- 1 bok choy or broccoli
- ¼ cup water
- Soy sauce, sesame oil, ginger, rice vinegar to taste
- Chopped scallions
- Sesame seeds
Instructions:
- Put up a pot of rice or other side.
- Heat a frying pan with olive oil and sauté tofu, chopped bell peppers, and bok choy or broccoli for about 5 minutes. Add ¼ cup water and continue cooking about 10 minutes.
- Add soy sauce, sesame oil, ginger, and a dash of rice vinegar to taste. Cook another 5 minutes.
- Mix in chopped scallions and garnish with sesame seeds.
