A simple but good one. This can be done with tofu or something else for a vegetarian dish!
Total time: 1 hour. Makes dinner for 3-4 people.
Materials: Glass baking pan; mixing bowl; aluminum foil.
Ingredients:
- 1 lb chicken
- 2 tbsp olive oil
- 2 tsp paprika
- 1 tsp cinnamon
- 1 tsp cumin
- ⅛ tsp cayenne pepper
- Brussel sprouts
- Bell pepper
- Carrots
- Onion

Instructions:
- Preheat oven to 375˚F. Put up a pot of rice or other accompaniment.
- Marinate chicken in olive oil, paprika, cinnamon cumin, and a dash of cayenne pepper while chopping vegetables.
- Place chicken in large glass pan and cover it with chopped vegetables. Cover loosely with aluminum foil.
- Bake about 40 minutes, until vegetables are browned and chicken is cooked through.
