Roasted Chicken and Veggies

A simple but good one. This can be done with tofu or something else for a vegetarian dish!

Total time: 1 hour. Makes dinner for 3-4 people.

Materials: Glass baking pan; mixing bowl; aluminum foil.

Ingredients:

  • 1 lb chicken
  • 2 tbsp olive oil
  • 2 tsp paprika
  • 1 tsp cinnamon
  • 1 tsp cumin
  • ⅛ tsp cayenne pepper
  • Brussel sprouts
  • Bell pepper
  • Carrots
  • Onion

Instructions:

  1. Preheat oven to 375˚F. Put up a pot of rice or other accompaniment.
  2. Marinate chicken in olive oil, paprika, cinnamon cumin, and a dash of cayenne pepper while chopping vegetables.
  3. Place chicken in large glass pan and cover it with chopped vegetables. Cover loosely with aluminum foil.
  4. Bake about 40 minutes, until vegetables are browned and chicken is cooked through.
