This is one of those one-pot meals. I like using red lentils for a quick warm soup dinner because they cook really fast! But I’ve also made this with dal.
Total time: 40 min. Makes dinner for 4-5 people.
Materials: Soup pot.
Ingredients:
- 2 cups red lentils
- 6 cups water
- 1 onion
- 2 carrots
- Bunch of beet greens, collard greens, or another green
- Turmeric, cumin, ginger, salt, and pepper to taste
Instructions:
- Bring 2 cups of red lentils and 6 cups of water to a boil. Start a pot of rice or other side.
- Meanwhile, sauté the onion in oil with a generous amount of turmeric, cumin, ginger, salt, and pepper. Chop carrots.
- Add onion and chopped carrots to the lentils with more spices if needed. Cook about 10 minutes.
- Chop greens and add to lentil soup. Cook about 10 more minutes.
- Best slightly cooled and also better the next day.
